Beef Enchilada Skillet

This one-skillet meal is great for a homemade meal in minutes with easy cleanup.

yellow onion

lbs ground beef

tbsp taco seasoning

oz enchilada sauce

cups black beans

drained and rinsed

cups canned corn

servings white or brown rice

cooked according to package instructions

10-in tortillas

cups Monterrey Jack cheese

cups fresh cilantro

minced

Preparation

  1. Add a drizzle of olive oil to a skillet and heat over medium-high heat.

  2. Add onion and garlic, cooking until fragrant. About 2 minutes.

  3. Add ground beef and taco seasoning.

  4. Break up and cook until no longer pink.

  5. Drain excess grease.

  6. Return beef mixture to skillet.

  7. Add enchilada sauce, beans, and corn.

  8. Reduce heat and cook until heated through, stirring frequently.

  9. Serve over rice with tortillas, shredded cheese, and cilantro.
