Caribbean Jerk Chicken

cups brown sugar

cups olive oil

tbsp soy sauce

cups white wine vinegar

lemon

lime

tsp hot pepper sauce

Vidalia onion

finely chopped

Preparation

  1. Combine spices, salt and sugar in a large mixing bowl; stir in olive oil, soy sauce, and vinegar.

  2. Cut lemon and lime in half, hand-squeeze juice over mixture.

  3. Add hot pepper sauce and chopped onion, mix well.

  4. Place uncooked chicken breasts in a large baking dish, cover with marinade mixture and soak for 2-4 hours.

  5. Grill indoors or out, continuously basting with marinade until done.
