Easy Honey Glazed Carrots
These easy honey glazed carrots are the perfect Thanksgiving side. They’re sweet enough to taste like candy, but carrots still add a healthy balance to the holiday feast. Cut regular sized carrots into one-inch lengths, or take an extra step out of the process and simply use baby carrots or pre-cut carrots. Feel free to sprinkle on some fresh thyme or dill when they’re served, though these easy honey glazed carrots will taste just as good with simple salt and pepper!

lbs baby carrots

cups honey

cups canned chicken broth or water

tbsp apple cinder vinegar

tsp unsalted butter
salt (to taste)
pepper (to taste)
Preparation
Heat the vegetable oil over medium-heat in a large skillet. Toss in the carrots and let them cook for about 5 minutes.
Add the honey, chicken broth, and vinegar to the skillet, and sprinkle with the salt and pepper. Bring everything to a boil, and then reduce to a simmer. Cover it, and cook for about 10 minutes. Take off the lid and cook the mixture over medium-high heat for about 10-15 more minutes. The carrots should be nice and tender, and there should only be a little bit of liquid left.
Take the skillet off the burner, add some butter, and swirl it all around. Drizzle with honey. Sprinkle a little more salt and pepper on, let cool, and serve.
