Ladybug Cookies
These adorable ladybug cookies are a perfect (and easy) treat for Valentine’s day!
They are the perfect sweet treat for the classroom Valentine’s party or to just enjoy at home!

24 ct. package of sandwich cookies

oz bag of red candy melts

oz bag dark chocolate melts

package of small edible candy eyes

package mini pink heart sprinkles

tsp coconut oil

Preparation
Using a double boiler method, fill half of the bottom pot with water. Once the water is boiling, place another pot on top. Pour the red candy melts into the top pot.
Using a rubber spatula, stir constantly until melted. Mix in 2 tbsp of coconut oil and stir again until completely smooth.
Using a fork, submerge the sandwich cookie completely into the red candy melt. Lightly remove any excess candy melt by tapping the cookie on the side of the pot and place on a cookie sheet lined with parchment paper. Repeat these steps with the remaining cookies. Let dipped cookies harden for about an hour in the fridge before continuing to the next step.
Once the red-covered cookies are completely cooled and hardened, melt the dark chocolate using the double boiler again. Dip only the top of the cookie into the chocolate for the face of the ladybug. While the dipped dark chocolate is still warm, place two eyes onto the center of the dipped chocolate section for the eyes of the ladybug. Place back on the lined cookie sheet. Repeat with the remaining cookies.
Next, scoop the melted dark chocolate into the disposable piping bag and cut a very small amount off the tip of the bag for precise decorating. Pipe a straight line down the center of the red part of the cookie, making wings. Then, alternate small chocolate dots around on the ladybug’s wings. Place mini pink hearts onto some of the small chocolate dots. Place the finished cookies back on the cookie sheet and return to the fridge to let the ladybugs cool completely.
