Mom’s Chinese Chicken Salad

Salad Ingredients

Boneless-skinless chicken breasts

cooked, cooled, and diced into strips

medium head of cabbage or bag a cabbage or mixed salad greens

6

green onions

chopped

¼

cups sliced almonds

1

package oriental noodle soup

¼

cups butter

1

tbsp Sesame seeds

1

hard boiled egg

Dressing Ingredients

cups vegetable oil

cups sesame oil

tbsp soy sauce

¼

cups rice vinegar

¼

cups sugar

Preparation

  1. Break up the oriental noodles and brown them in butter. Add the sesame seeds and brown lightly. Sprinkle just a small amount of seasoning packet over the mixture and set aside.

  2. Cut the cabbage into bite-size pieces. Add chicken. Sprinkle on onions, almonds, and noodle/sesame seed mixture.

  3. Mix all the ingredients together for the dressing. Add the rest of the seasoning packet. Stir vigorously until sugar is dissolved.

  4. Pour over salad mixture and toss.
