Pancakes for One

Do you love having pancakes for breakfast but don’t want to make a whole batch? Then this pancakes for one recipe is for you!

cups all-purpose flour

1

tsp baking powder

½

tbsp sugar

tsp salt

1

egg

¾

cups milk

¼

tsp vanilla

cinnamon

tbsp butter (melted)

Preparation

  1. In a medium bowl, whisk together dry ingredients.

  2. In another bowl, whisk wet ingredients.

  3. Add wet ingredients to dry ingredients and mix until just incorporated. There may be small lumps.

  4. Add small drizzle of oil or pat of butter to griddle on medium heat.

  5. Pour about 1/2 cup of batter onto griddle.

  6. Cook 1–2 minutes, or until bubbles form on surface of pancake and edges start to brown.

  7. Flip and cook another 1–2 minutes until golden brown on underside.
