Swiss Roesti Potatoes

There are a lot of Swiss foods that can really just “hit the spot”. Swiss cheese, chocolate, fondue, the list goes on! One of Switzerland’s notable dishes also includes roesti!

These potatoes are easy, tasty, and an incredibly filling dish. Try them with ketchup, hot sauce, cheese, or any other toppings of your choosing.

tbsp melted butter

boiled potatoes

peeled and shredded

1

onion (optional)

chopped

½

cups shredded cheddar or swiss cheese

amounts of cheese, potatoes, and onions may be adjusted to suit your taste

Preparation

  1. Melt better in a skillet. Add onion and fry until translucent.

  2. Add all potatoes and most of the cheese. Fry and stir slightly. Fry without stirring for an additional 5-8 minutes, until a golden crust forms at the bottom.

  3. Turn with a pancake turner and press potatoes down to brown on the other side.

  4. Season with salt, pepper, and remaining cheese.
