Cooking turkey meatballs in a muffin tin is an easy way to make them perfectly crispy on the outside and perfectly cooked on the inside.

red bell pepper

tbsp Worcestershire sauce

cups chicken broth

lbs ground turkey

cups egg whites

cups bread crumbs

cups quick-cook oats

tsp ground cumin

tsp ground chipotle

tbsp garlic powder

tsp black pepper

Preparation

  1. Preheat oven to 375. Grease a 12-cup muffin tin with cooking spray. Heat olive oil in a skillet over medium-high heat; add onion, celery, bell pepper, and garlic. Add a little salt and pepper, and cook for 5-6 minutes. Stir in Worcestershire sauce and chicken broth; cook for another 5 minutes until veggies are tender. Remove from heat and set aside.

  2. In a large bowl, combine ground turkey with the rest of the ingredients. Add cooked veggies and mix thoroughly. Roll into 12 even balls and place in muffin tin. Bake for 25-30 minutes or until cooked through. Enjoy!
