Summer is a great time to make use of all the zucchini you have on your hands. Sometimes, it’s fun to mix things up from the zoodles, pastas, and salads with zucchini. That’s when zucchini bread is a fantastic choice!

This zucchini bread is an easy, sweet, and tasty approach to making use of all the zucchini you might have in your fridge. Make this recipe all your own by adding different nuts, raisins, or even chocolate!

cups zucchini

peeled and grated

tsp baking powder

cups nuts (chopped)

oz can crushed pineapple

cups raisins

Preparation

  1. Mix eggs, oil, and sugar together in a bowl. Add grated zucchini and mix well.

  2. Sift together flour, baking soda, baking powder, salt and cinnamon. Pour dry ingredients into zucchini mixture and mix well.

  3. Add vanilla, nuts, pineapple, and raisins. Mix well.

  4. Pour mixture into two greased and floured loaf pans or one bundt pan. Bake at 350 degrees F for one hour or until a toothpick test comes out clean.
